This project explores the food culture of this fascinating country and gathers some really incredible stories of people, places and food. It’s wonderful how everything there is instilled with spirituality and mindfulness. Food is no exception, in fact, there are two Japanese words associated with food that inspired this project: ”itadakimasu” and ”gochisosama”. They are used before and after the meal and show respect, appreciation, and gratitude for the plants, animals, farmers, fishermen, chefs and everything that went into the meal. In Japan, even the smallest town has a buzzing market displaying the most amazing ingredients and produce that people grow and fish locally and sustainably. Here, chefs from all walks of life handpick the freshest ingredients to transform them into beautiful dishes using traditional techniques they have mastered over the years. I hope this project takes you on a journey from market to plate, celebrating the produce, rituals and people involved in the process of bringing joy through food.
